A juicy, tender, and flavorful classic meatloaf is a comforting American favorite. This easy recipe gives you a moist, perfectly seasoned meatloaf with a sweet and tangy glaze.

 

Ingredients (Serves 6-8)

For the Meatloaf

  • 2 lbs ground beef (80/20 for juiciness)
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup milk
  • 2 eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons ketchup
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano or Italian seasoning
  • ½ teaspoon paprika

For the Glaze

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce

Instructions

1. Prep the Meatloaf Mixture

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix breadcrumbs and milk; let sit for 5 minutes to absorb.
  • In a large bowl, combine ground beef, soaked breadcrumbs, eggs, onion, garlic, Worcestershire sauce, ketchup, salt, pepper, oregano, and paprika.
  • Gently mix with your hands until just combined (do not overmix).

2. Shape and Bake

  • Line a baking sheet with parchment paper or grease a loaf pan.
  • Shape the meat mixture into a loaf and place it on the sheet (or press it into a loaf pan).
  • Bake for 40 minutes.

3. Make the Glaze

  • In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce.
  • After 40 minutes of baking, brush the glaze over the meatloaf.
  • Bake for another 15-20 minutes until the glaze caramelizes.

4. Rest and Serve

  • Let the meatloaf rest for 10 minutes before slicing to keep it juicy.
  • Serve with mashed potatoes, roasted vegetables, or green beans.
