A juicy, tender, and flavorful classic meatloaf is a comforting American favorite. This easy recipe gives you a moist, perfectly seasoned meatloaf with a sweet and tangy glaze.
Ingredients (Serves 6-8)
For the Meatloaf
- 2 lbs ground beef (80/20 for juiciness)
- 1 cup breadcrumbs (plain or seasoned)
- ½ cup milk
- 2 eggs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 2 tablespoons ketchup
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano or Italian seasoning
- ½ teaspoon paprika
For the Glaze
- ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon Worcestershire sauce
Instructions
1. Prep the Meatloaf Mixture
- Preheat oven to 375°F (190°C).
- In a bowl, mix breadcrumbs and milk; let sit for 5 minutes to absorb.
- In a large bowl, combine ground beef, soaked breadcrumbs, eggs, onion, garlic, Worcestershire sauce, ketchup, salt, pepper, oregano, and paprika.
- Gently mix with your hands until just combined (do not overmix).
2. Shape and Bake
- Line a baking sheet with parchment paper or grease a loaf pan.
- Shape the meat mixture into a loaf and place it on the sheet (or press it into a loaf pan).
- Bake for 40 minutes.
3. Make the Glaze
- In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce.
- After 40 minutes of baking, brush the glaze over the meatloaf.
- Bake for another 15-20 minutes until the glaze caramelizes.
4. Rest and Serve
- Let the meatloaf rest for 10 minutes before slicing to keep it juicy.
- Serve with mashed potatoes, roasted vegetables, or green beans.
