Ingredients (Makes 10-12 pancakes)
For the Pancakes
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ¼ cups milk (whole or buttermilk for extra fluffiness)
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
For Cooking
- Butter or oil (for greasing the pan)
Optional Toppings
- Maple syrup
- Fresh berries
- Whipped cream
- Chocolate chips
- Nuts or powdered sugar
Instructions
1. Mix the Dry Ingredients
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
2. Mix the Wet Ingredients
- In another bowl, whisk milk, egg, melted butter, and vanilla extract.
3. Combine the Batter
- Pour the wet ingredients into the dry ingredients.
- Stir gently until just combined (a few lumps are okay!)—don’t overmix, or the pancakes will be dense.
4. Cook the Pancakes
- Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
- Pour ¼ cup of batter per pancake onto the pan.
- Cook until bubbles form on the surface (about 2 minutes), then flip.
- Cook the other side for 1-2 minutes until golden brown.
